Ingredients
3 pieces of tomato
Lemon (grated lemon peel)
1 ball of burrata cheese
20 gr. pesto sauce
10 gr. of olive oil
Salt
Black Pepper
Thyme

How to Cook?

Cut the tomatoes of red, green and pink colour into thin and round slices.
Place the sliced tomatoes on a large and flat serving plate.
Blend the olive oil, salt, freshly ground black pepper and dried thyme in a small bowl to produce a simple sauce. This sauce will enhance the natural flavour of the tomatoes and allow the flavours to blend together.
Pour the sauce that you have prepared evenly over the tomato slices. You may want to brush the sauce over the tomatoes with the help of a brush to make sure that the sauce reaches every part of the tomatoes.
Allow the tomatoes to be marinated for a short period of time, about a few minutes.
Grate the lemon peel over the tomatoes using a fine grater. The refreshing aroma of the lemon peel will revitalise the flavours of the tomatoes.
Place the burrata cheese, either sliced or as a whole, in the centre of the plate on which you will serve the tomato slices.
Pour the pesto sauce evenly by spreading it evenly all over the burrata cheese and tomatoes.

You may serve it with slices of fresh and crispy bread lightly toasted with olive oil.
