Ingredients
400 gr. tomato
1 lemon
340 gr. sugar
10 gr. gelatine
20 gr. starch
50 gr. grated coconut flakes

Key Points

When peeling the tomatoes, the skins will be peeled more easily if you first place them in boiling water and then immediately afterwards in cold water. It is important to soak the gelatine sufficiently so that it dissolves completely. You will get better results if you strain the gelatine well before adding it to the hot tomato mixture.

How to Cook?

Soak and leave the tomatoes in boiling water for a short period of time to soften the skins of the tomatoes and peel them easily after the skins have softened.
Puree the peeled tomatoes with the help of a blender or grater.
Transfer the tomato puree into a pot.
Add the freshly squeezed lemon juice and sugar to the tomato puree.
Place the pot over medium heat and boil the mixture while stirring it continuously. Keep stirring until the sugar is completely dissolved.
Soak the gelatine in cold water and leave it in the water for about 5-10 minutes until it has swollen. Then remove the gelatine from the cold water and drain it.
Add the gelatine to the tomato mixture and keep stirring to ensure that it dissolves completely.
Dilute the starch with a little water to obtain a smooth solution. Add the starch mixture that you have prepared into the boiling tomato mixture and continue cooking until the mixture reaches a thick consistency.
When the baking process is completed, pour the hot Turkish delight mixture into a greased glass or silicone baking mould. Greasing the mould will allow the Turkish delight to be easily removed from the mould.
Allow the mixture poured into the glass or mould to cool down to room temperature. Once the mixture has cooled, cover it with plastic wrap and leave it in the refrigerator for a few hours or for overnight, depending on your preference.
After the Turkish delight has cooled down and allowed to rest, remove the completely hardened tomato Turkish delight from the glass or mould and prepare to serve by slicing or cutting into cubes.
Optionally, you can decorate the Turkish delight by sprinkling grated coconut flanks or powdered sugar on the top.
