SERVING

Ingredients
4-5 pieces of mature tomato
3 tablespoons of olive oil
1 teaspoon of thyme
1 teaspoon of chilli flakes
1 teaspoon of black pepper
Half teaspoon of salt
1 whole garlic

Key Points

Make sure that the frying pan is not too hot. Cooking over medium heat allows the tomatoes to cook slowly and cook well on the inside without burning on the outside. You can enhance the flavour of the dish by using a variety of spices, but it is important to balance the amount of spices so as not to overpower the natural flavour of the tomatoes.

How to Cook?

Wash the tomatoes thoroughly and remove the stems with a sharp knife. Then slice the tomatoes into round slices of as even as possible in terms of thickness.
Add three tablespoons of olive oil to a large frying pan and heat it over a medium heat.
Carefully place the tomato slices in a single layer in the heated oil. It is important that the tomato slices do not touch each other to ensure that each slice is fried evenly.
Sprinkle the prepared thyme, chilli flakes, black pepper and salt evenly over the tomatoes.
When the bottoms of the tomatoes are lightly browned, carefully turn them over using a spatula. Fry the other side so that the tomatoes are cooked well on both sides.
When the tomatoes are well browned on both sides and slightly caramelised, take the frying pan from the flame and finish cooking.
Place the tomatoes on a warm serving plate. If you wish, you can sprinkle with fresh thyme or drizzle with a little more olive oil.
Pan-fried tomatoes can be served with crusty bread such as croutons or breadsticks. It is also a perfect choice as a side dish for grilled meats.
