Ingredients
For the base:
200 gr. salted biscuit
100 gr. butter
For its cream:
500 gr. mild cream cheese
3 eggs
300 gr. cream
20 gr. salt
100 gr. sugar
2 tablespoons of tomato puree
Spices of your preference

Key Points

It remains important to spread the cheesecake base evenly so that the whole cheesecake cooks evenly during baking. The oven temperature needs to be kept low to prevent the outside of the cheesecake from browning too quickly. The cheesecake must be allowed to rest for the flavours to settle, which is why it is ideal to leave it for at least a day.

How to Cook?

Grind the salted biscuits into a fine flour with the help of a blender.
Melt the butter in a bowl and mix it with the flour obtained from the salted biscuits.
Pour the mixture into a clamped cake tin. After pouring the mixture, press it down with your hands so that it forms a flat surface.
In another mixing bowl, add the mild cream cheese, cream and tomato puree. Mix them a little at first and then start whisking.
Add the eggs one by one to the whisked mixture and continue whisking. You can obtain a more homogeneous mixture by adding the eggs one by one while you keep on whisking.
Add the sugar, salt and spices of your preference and mix once again.
Pour the mixture over the biscuit base in the cake tin and spread it out evenly on the biscuit base.
Bake the cake in an oven that has been preheated to 180 degrees for 35 minutes.
After removing the tomato cheesecake from the oven, leave it to cool down to room temperature.
Put cheesecake that has come to room temperature in the refrigerator and let it rest in this colder space for a while. If you prepare the cheesecake at night, it will be enough to leave it in the refrigerator until the morning.
After slicing the cheesecake rested enough, you can serve it by garnishing it with fresh tomato slices or basil leaves.
