SERVING

Ingredients
5 pieces of tomato
2 pieces of onion
2 pieces of carrot
2 pieces of potato
Half a bunch of parsley
Half a bunch of dill
3 cloves of garlic
265 gr. flour
10 g baking soda or 1 bottle of mineral water
4 eggs
400 ml of vegetable oil

Key Points

Draining the vegetables thoroughly prevents the hash browns from disintegrating during frying and ensures that they bind. Heating the vegetables in boiling oil ensures that the hash browns get crispy on the outside and remain soft on the inside. If the hash browns are served hot and served together with yoghurt, the flavour will be more balanced.

How to Cook?

Wash the tomatoes and chop them after removing their stems.
Wash and peel the onion, carrot and potato. Then grate them using a fine grater.
Squeeze the water from the grated vegetables to remove excess moisture. Thus, your hash browns will be crispier.
Wash the parsley and dill thoroughly and chop them very finely.
Peel the garlic and try to chop it as finely as possible or grate it.
Mix the prepared tomatoes, grated vegetables, finely chopped greens and garlic in a large mixing bowl.
Add the flour and baking soda to the mixture. The flour will absorb the moisture released from the vegetables and help the hash browns to bind better and prevent them from falling apart.
Break the eggs one by one and add them to the mixture and mix them after adding each one.
Thoroughly mix all the ingredients with a large spoon or spatula to achieve a homogeneous consistency.
Start heating the vegetable oil in a frying pan over a medium heat. It is important that the vegetable oil has already boiled before adding the hash brown mixture to the oil. By this means, the hash browns are quickly fried on the outside and become crispier.
Take a tablespoon of the hash brown mixture you have prepared and cover it with flour lightly and then turn it into a flat shape. Then fry in hot oil until they turn brown on both sides.
Place the cooked hash browns on a plate covered with paper towels to drain the excess oil.
Place the hash browns you have prepared on the service plate. You can serve it by adding some yoghurt on top of it or next to it.
