Ingredients
1 kilogram of green tomatoes
50 gr. rock salt
20 gr. lemon salt
30 gr. sugar
10 gr. black pepper
40 gr. chickpeas
3 pieces of bay leaves
Grape vinegar
Water

Storing the jar in a cool and dark place promotes the maturation of the pickles. How to Cook?

Wash and prepare the green tomatoes, either as whole or sliced, depending on your preference.
Add the tomatoes to a large jar.
Add the lemon salt, sugar, rock salt, ground black pepper and chickpeas to the jar respectively.
Make sure that the ingredients are evenly distributed among the tomatoes.
Depending on the size of the jar you are using, add enough grape vinegar to fill the jar.
Fill the remaining space with water and make sure that the tomatoes are completely submerged.
Place the bay leaves in the jar in such a way that they are at the top of the jar.
Close the lid of the jar tightly.
After the preparation is completed, place the pickle jar in a dark and cool place.
In order for the tomato pickle to be ready, the jar needs to be kept in a cool and dark place for approximately 3 weeks.
You can keep this time shorter or longer according to your preference for the taste of the pickles.
Once the holding time is over, your pickles will be ready to be consumed.
You can consume the pickles as an accompaniment to meals or included as an ingredient in salads. Remember to store the pickles in the refrigerator after opening the jar.
