Delicious tomato ravioli recipe prepared with the healthy tomatoes that are naturally grown in the technological Agrotermal greenhouses equipped with geothermal heating.

Ingredients
For the dough;
300 gr. flour
6 eggs
20 gr. salt
1 water glass of tomato juice
For the fillings;
100 gr. grated cheese
10 gr. black pepper
For the sauce;
2 tablespoons of olive oil
3 pieces of grated tomato
2 cloves of garlic
Salt, black pepper and thyme

Key Points

The ravioli dough must be sufficiently kneaded and rested to ensure that the dough is elastic and smooth. For the cheese filling, you can use different types of cheese to obtain a rich flavour. When preparing the ravioli sauce, enough time should be given for the tomatoes to cook completely and the sauce to get thicker.

How to Cook?

To prepare the dough, add the flour, eggs, salt and tomato juice to a mixing bowl.
Mix the ingredients together thoroughly until you get a dough with the consistency of an earlobe.
Cover the bowl and leave the dough to rest for approximately 15-20 minutes.
Roll out the rested dough on a lightly floured clean bench with the help of a rolling pin.
Place the grated cheese on half of the dough, you have rolled out, intermittently and add black pepper on top of it.
Fold the other half of the dough onto the cheese and seal the two layers together by pressing lightly with your hands.
Cut the closed dough with the cheese into small circles as if you were cutting dumplings.
Place the ravioli you have cut in boiling water and add salt. Then boil them for about 5-7 minutes. When the ravioli starts to float to the surface of the water, it means that your dough has cooked.
Heat the olive oil in a saucepan and add the chopped garlic cloves. Fry the garlic until it turns slightly darker.
Then add the grated tomatoes and cook it while continuously stirring.
Add a teaspoon of each of salt, black pepper and optional thyme to the saucepan. Cook it until the sauce thickens.
Remove the cooked ravioli from the water, drain and place them on the serving plates.
Pour the tomato sauce you have prepared beforehand over the ravioli on the serving plate.
You may prefer to serve it hot.
